Healthy Lunch Date

Below: My husband's mesquite turkey burger, lettuce, tomato, onion on whole wheat bun. He could not wait for me to take a picture, he had to dig in!

Below: My low-fat chicken salad with pecans and rosemary and green-mix salad. So much food could only eat the salad and half sandwich.

Unbelievably I talk my husband into going to Ziggy's Healthy Bar and Grill (River Oaks) for lunch. My husband does not tend to like much of anything advertised as healthy, organic, or low fat. But we had a wonderful lunch date, and the food was delicious!!! The pictures are from my Blackberry so they are tad shaky and don't quite do the food justice.

Not pictured: Dessert was an orange-almond flourless sugar free cake. It was very different from anything I have ever had before. It was not super sweet but very satisfying.

After a delicious lunch I took Jordan to World Market for the first time. We walked out with two bottles of wine and 3 bottles of imported ales.


MORNING: After breakfast this morning we went to the park and did a 6 mile run. It was way too hot and humid and I did not enjoy the run nearly as much as I should have. After the run we stopped at Whole Foods and bought fresh blueberries, chicken sausage, and giant vegan cookies!

Storms, Internet Loss, New Day

Well, as you can tell we had a bit of a storm here last night. Needless to say it rained (monsoon level) for about 45 minutes straight. Actually this is the first real thunderstorm I can think of that has happened since we moved here.

This is the street right in front of our apartment complex...and tad bit of water. This is actually what all the streets surrounding our apartment complex look like. I guess if we ever get another hurricane we should just plan on not driving anywhere in our little car.

Anyway, around 730 this morning my Internet began working again.



Below is my breakfast this morning, thick and creamy Yoplait-strawberry mixed with frozen berries, hand full of Honey Bunches of Oats, cinnamon, honey. Hoping to go run outside today!

Early Lunch


For lunch, salad and tofu stir fry.

Salad

romaine lettuce
carrots
onion
parmesan cheese
Wishbone spray Ranch

Tofu stirfry

-tofu
-Kroger mixed frozen mixed vegetables (Fiesta style)
-2 tsp teriakyi sauce
-soy sauce to garnish

This stir fry was great. The mixed vegetables were great, they had broccoli, chick peas, kidney beans, white beans, snap peas, and peppers.

Early Riser


Well the dog was up at 515am. I guess that is an improvement from the 230 am all week. So I got up, took him on a one block only walk, and returned unable to sleep and unmotivated for the usual 6am gym time.

Instead I made my husband lunch (sauteed turkey sausage, cheese, dijon, on his white bread) and myself breakfast.

Let me say, although it does not look super appetizing this breakfast tastes great!

I used one thick and creamy cinnamon roll Yoplait (my favorite), 1 cup frozen mixed berries (I am temporarily out of fresh, cinnamon and honey to garnish. On the side 1 piece whole wheat toast with sugar free strawberry preserves.

I must fit in a workout today, but I am unmotivated for the gym. And needless to say it is always way too hot outside to run. I may turn on the TV and use the stationary bike today.

Food

Whole Foods Market Carry Out Pizza

My husband and I picked up this vegetarian pizza at Whole Foods Market for lunch/dinner/lunch the next day. The pizza is huge! It is on a whole wheat crust with red pepper hummus, fresh spinach, artichokes, black olives, roasted red peppers, and tomatoes. I believe it could be eaten uncooked but we toasted it up in the oven! It was delicious!

We also picked up fresh cherries for dessert!

















Banana Soft Serve

Well, it has been all the rage on the food blogs so I had to give it a try. I LOVE IT!. My husband still can't believe that it only has bananas in it. The texture is the exact same as soft serve!

1 banana
2 tbsp skim milk
1 tbsp Splenda

Cut banana into small chunks and freeze. Once frozen solid, place in food processor with splenda. I like to process the bananas until they are completely chopped up. Then I add in the milk and mix again until you get desired texture. I add the Splenda because I am not the biggest banana fan so I need it to be a little sweeter. I also add the milk for a creamer texture.

Spoon into dessert bowl. I like to add blueberries, cinnamon, and honey. Or add sugar free chocolate sauce.

Weeknight Salad Dinner

Romaine lettuce
blueberries
carrots
mushrooms
blackbeans
corn
Parmesan cheese (of course)


Topped with the Ranch Salad spray dressing.
On the side we had some three cheese bread that was on sale at Kroger today.






Bagel Pizza

1 whole wheat bagel
1 laughing cow cheese wedge
frozen spinach
frozen peppers and onions mix
sliced fresh mushroom
3 tablespoons pasta sauce
Parmesan cheese

Toast bagel. Then spread on Laughing Cow cheese. Spread on pasta sauce. Add on frozen vegetables (optional to saute before) and sliced mushrooms. Sprinkle with Parmesan cheese. Place under broiler until cheese is slightly golden.

Well...I realize it has been a month since I have posted. I moved, finished up my internship, GOT A DOG, and am getting ready for another year of school (ugh!). I have taken a few pictures of the food I have been eating lately which I will post. My latest find has been the bulk sized fresh blueberries at Sams. I love Sams Club. My husband and I shop there even though it is just the two of us because we just eat too much! Some Sams Club staples for us include romaine, mushrooms, apples, Fiber One bars, and Tyson chicken nuggets for the hubby.

Lately my exercise routine has included 40 to 50 mins of running and elliptical at the gym during the week. On Saturday I do a long 6 mile run outside.

As I mentioned above, we got a dog. We adopted a dog from the Humane Society. His name is Trooper. He is approximately five years old and a terrier mix. He is the best dog ever-we got lucky. He is housetrained and does not chew or really shed for that matter. He LOVES to walk, which forces us to not be so lazy in the evenings.
