As you know I am really bogged down with studying right now, so the hubby and I have had two really nice relaxing dinners the past two nights.
Sunday night:
Start of a really good stir-fry: chopped mushrooms, onion, and pineapple chunks (from a can)
Added in these
Also added in sliced carrots and black beans for some extra protein since this was a meat-free dish. (I must mention is extremely hard to get the hubby to eat anything without meat)
Final Product...Yum Yum!
